Longest night, we celebrate hidden between poplars, the river by our side

With poppy’s red, malva’s purple and nettles bright green.

Vine leaves with herbs from the Causse

Entrée 

Linseed oat cracker with goat’s cheese

Malva flower and roasted walnut

Plat de Résistance

Cinnamon roasted rice

Lentils with wild thyme and laurel

Cherry-Plum chutney with rosemary

Mizuna emulsion on fire roasted beets

Smokey Pitas

Carrot julienne with Joghurt sauce

Dessert

Nettle cake

Rose petal jam

Caramelized apricot

Yoghurt and black tahini

It’s all from here. Most from the wild. Some from the goats. All transformed in our kitchen.
